Steps

  1. Preheat oven to 180°C. Place the bread in a bowl and pour the milk over it to soak. Set aside.
  2. Wash the tomatoes, cut off the top (about 1 cm) and scoop out the flesh with a spoon. Set the flesh aside.
  3. Peel and finely chop the shallot and garlic. Chop the parsley.
  4. In a bowl, combine the sausage meat, soaked bread, parsley, garlic and shallot. Season with salt and pepper and mix well with your hands.
  5. Pour the rice, 180 ml of water per person and the tomato flesh into a gratin dish. Season with salt and pepper and mix.
  6. Fill the tomatoes with the sausage stuffing, arrange them in the oven dish, put the tomato lids back on and bake for 45 minutes at 180°C.
  7. Take the dish out of the oven and sprinkle with parsley. It's ready!
