Scallops on a Bed of Leeks

Ingredients for 4 parts
- 30 g. butter
- 1 c. à c. sea salt
- 2 c. à s. olive oil
- 100 ml. crème fraîche
- 12 scallops
- 1 c. à c. white pepper
- 2 leek white parts
Steps
- Wash the leek whites thoroughly and slice them thinly.
- In a saucepan, melt the butter over low heat. Add the sliced leeks, salt, and pepper. Cook over low heat for 15 minutes, until tender.
- Add the cream to the leeks and simmer over low heat for an additional 5 minutes.
- Meanwhile, heat the olive oil in a pan over high heat. Sear the scallops for 2-3 minutes on each side, until golden brown and cooked through.
- Arrange the creamy leeks on plates and place the scallops on top. Serve immediately.
