Steps

  1. Wash the leek whites thoroughly and slice them thinly.
  2. In a saucepan, melt the butter over low heat. Add the sliced leeks, salt, and pepper. Cook over low heat for 15 minutes, until tender.
  3. Add the cream to the leeks and simmer over low heat for an additional 5 minutes.
  4. Meanwhile, heat the olive oil in a pan over high heat. Sear the scallops for 2-3 minutes on each side, until golden brown and cooked through.
  5. Arrange the creamy leeks on plates and place the scallops on top. Serve immediately.
