  1. Rinse the quinoa under cold water. In a saucepan, bring the water to a boil, add the quinoa, and simmer for 15 minutes. Drain if necessary.
  2. Meanwhile, dice the bell pepper, cucumber, and tomato. Peel and slice the avocado.
  3. In a pan, heat the olive oil and cook the chicken breast for 8-10 minutes, until fully cooked. Season with salt and pepper.
  4. In a bowl, mix the lemon juice, a drizzle of olive oil, salt, and pepper to prepare the dressing.
  5. In a large bowl or plate, arrange the cooked quinoa, vegetables, chicken, and avocado. Drizzle with the dressing and sprinkle with fresh coriander.
  6. Serve immediately.
