Steps

  1. Finely slice the shallot and cut the mushrooms into slices.
  2. In a pan, melt the butter and sauté the shallots until they are translucent.
  3. Add the mushrooms and sauté for a few minutes.
  4. Pour in the Madeira wine and let it reduce by half.
  5. Add the veal stock, salt, and pepper. Simmer for 15 minutes.
  6. Serve hot with dishes of calf's head or other meats.
