Ingredients for 4 parts
- 3 eggs
- 50 g. sugar
- 10 g. freeze-dried coffee
- 20 ml. rum
- 5 g. cacao
- 250 g. mascarpone
- 100 g. ladyfingers biscuits
Steps
- Separate the egg whites from the yolks
- Beat the caster sugar with the egg yolks vigorously until pale
- Add the mascarpone and mix until smooth
- Set aside in the fridge
- Beat the egg whites until stiff
- Gently fold the egg whites into the previous preparation
- Mix the alcohol and coffee, quickly soak the biscuits
- Arrange a layer of biscuits at the bottom of the dish
- Cover with half of the mascarpone cream
- Arrange a second layer of biscuits soaked in coffee
- Cover with the remaining mascarpone cream
- Refrigerate for at least 4 hours (ideally 24 hours)
- Sprinkle with bitter cocoa before serving.
