Steps

  1. Bring a large pot of salted water to a boil.
  2. Meanwhile, dice the cured pork and fry in a pan over medium heat until crispy.
  3. In a bowl, whisk together the egg yolks, whole egg, grated pecorino cheese, and black pepper. Add salt
  4. Cook spaghetti according to package directions.
  5. Drain the spaghetti and immediately add them to the pan with the fried cured pork.
  6. Remove the pan from the heat and add the egg and cheese mixture. Stir quickly so that the sauce coats the pasta.
  7. Serve immediately, garnishing with extra pecorino and black pepper.
