- Bring a large pot of salted water to a boil.
- Meanwhile, dice the cured pork and fry in a pan over medium heat until crispy.
- In a bowl, whisk together the egg yolks, whole egg, grated pecorino cheese, and black pepper. Add salt
- Cook spaghetti according to package directions.
- Drain the spaghetti and immediately add them to the pan with the fried cured pork.
- Remove the pan from the heat and add the egg and cheese mixture. Stir quickly so that the sauce coats the pasta.
