Ingredients for 4 parts
- 50 g. butter
- 20 g. sugar
- 1 c. à s. sea salt
- 125 g. onions
- 10 ml. whole milk
- 30 g. crème fraîche
- 1 c. à s. white pepper
- 20 ml. bechamel sauce
Steps
- Blanch the minced onions for 5 minutes in the milk and 40 cl of boiling water.
- Drain the onions and then sweat them in butter for a long time, but without browning, with a pinch of sugar.
- Add 2 spoonfuls of water and continue cooking for about ten minutes.
- Mix the Béchamel sauce and stir, then add the cream to the sauce until the desired consistency is achieved. Season to taste.
- Off the heat, blend the sauce and then strain it through a sieve.
- Add the cream, then reduce until the desired consistency is achieved. Season to taste.
