- Soft the butter to a spreadable consistency.
- Once it is well softened, smooth it with a small whisk.
- Rinse the chopped shallots under a stream of cold water.
- Finely chop the parsley.
- Remove the germ from the garlic, crush it, and finely chop it.
- Mix the softened butter, garlic, and shallots.
- Season with salt and pepper. If desired, add the pastis.
- Place the butter in a pastry bag (without a tip). Spread plastic wrap on the work surface and squeeze out a roll of compound butter onto this sheet.
- Roll it to form a nice, even roll, then store in the fridge or freezer.
