  1. Soft the butter to a spreadable consistency.
  2. Once it is well softened, smooth it with a small whisk.
  3. Rinse the chopped shallots under a stream of cold water.
  4. Finely chop the parsley.
  5. Remove the germ from the garlic, crush it, and finely chop it.
  6. Mix the softened butter, garlic, and shallots.
  7. Season with salt and pepper. If desired, add the pastis.
  8. Place the butter in a pastry bag (without a tip). Spread plastic wrap on the work surface and squeeze out a roll of compound butter onto this sheet.
  9. Roll it to form a nice, even roll, then store in the fridge or freezer.
