Ingredients for 2 parts
- 2 eggs
- 2 c. à s. sugar
- 2 c. à s. porto wine
Steps
- Boil a little water in a medium saucepan.
- Separate the egg whites from the yolks.
- Place the egg yolks and sugar in a bowl.
- Whisk the egg yolks and sugar until the mixture whitens.
- Add the Marsala or Port.
- Place the bowl over simmering water (bain-marie), making sure that the bowl does not touch the water.
- Cook over very low heat, whisking constantly with a whisk.
- Whisk for about 10 minutes, until you obtain a thick, creamy cream that retains the whisk marks.
