Steps

  1. Break the eggs into a bowl, add salt, pepper and crème fraîche, then whisk lightly. Melt the butter in a frying pan, pour in the eggs and spread them over the entire surface. Cook for a few moments without moving.
  2. Slightly lift the edge of the omelette with a spatula and bring it towards the center to cook the liquid eggs. Repeat several times.
  3. Cook to the desired consistency, then tilt the pan to slide the omelette onto a plate by folding it in two.
