Steps
- Rinse the lemons and cut off the tops. Slightly flatten the base of the tops so that they can stand upright.
- Scoop out the pulp of the lemons with a small spoon and set aside. Freeze the lemons and their tops.
- Strain the lemon juice.
- In a saucepan, bring the water and sugar to a boil for 2 minutes. Let cool and add the lemon juice. Leave to rest overnight in the refrigerator.
- Beat the egg whites until stiff and gently fold them into the cooled lemon syrup.
- Fill the frozen lemons with the mixture, cover with their tops and freeze for 4 hours.
