Steps

  1. Rinse the lemons and cut off the tops. Slightly flatten the base of the tops so that they can stand upright.
  2. Scoop out the pulp of the lemons with a small spoon and set aside. Freeze the lemons and their tops.
  3. Strain the lemon juice.
  4. In a saucepan, bring the water and sugar to a boil for 2 minutes. Let cool and add the lemon juice. Leave to rest overnight in the refrigerator.
  5. Beat the egg whites until stiff and gently fold them into the cooled lemon syrup.
  6. Fill the frozen lemons with the mixture, cover with their tops and freeze for 4 hours.
