Steps

  1. Cook the potatoes in a pot of boiling water for 45 minutes.
  2. Let the potatoes cool and peel them.
  3. Mash the potatoes using a potato ricer.
  4. Preheat oven to 200°C.
  5. In a mixing bowl, season the mashed potatoes with salt and pepper.
  6. Add the egg yolks and softened butter to the mashed potatoes. Mix well using a spatula.
  7. Transfer the mixture into a piping bag fitted with a 13mm fluted nozzle.
  8. Pipe duchess potatoes onto a baking sheet lined with parchment paper.
  9. Bake the duchess potatoes for 10 to 15 minutes.
  10. Serve the duchess potatoes immediately.
