Steps

  1. Mix warm milk, sugar and yeast in a bowl. Let stand for 10 minutes to activate the yeast.
  2. Mix flour and salt in another bowl.
  3. Add melted butter, eggs, vanilla and yeast mixture to the flour-salt mixture. Knead for about 10 minutes by hand or 5 minutes with a stand mixer until you have a smooth and elastic dough.
  4. Form a ball with the dough and place it in a lightly oiled bowl. Cover with a clean cloth and let rise for about 1 hour 30 minutes in a warm place (the dough should double in volume).
  5. While the dough is rising, prepare the filling. Mix brown sugar and cinnamon. Set aside.
  6. Roll out the risen dough into a large rectangle about 0.5 cm thick.
  7. Spread the softened butter over the entire surface of the dough, then sprinkle evenly with the sugar-cinnamon mixture.
  8. Roll the dough up from the longest side to form a long roll. Cut slices about 3 to 4 cm thick and place them in a buttered dish, leaving a little space between each roll to allow them to swell. Cover and let stand for another 30 to 45 minutes for a second rise.
  9. Preheat oven to 180°C. Bake cinnamon rolls for 20 to 25 minutes until golden brown.
  10. While the rolls are baking, prepare the icing. Mix the icing sugar, cream cheese, milk and vanilla until smooth.
  11. Once the cinnamon rolls are out of the oven, let them cool slightly, then generously top them with icing.
