Steps

  1. Crack the eggs, separating the whites from the yolks. Melt the chocolate in a double boiler. Remove from heat and let cool.
  2. Add the yolks to the lukewarm melted chocolate and mix in concentric circles with a spatula.
  3. Beat the egg whites until stiff with a pinch of salt, then add the sugar while continuing to whisk.
  4. Gently fold the beaten egg whites into the chocolate in three batches.
  5. Pour the mousse into a large bowl or ramekins. Let set in the refrigerator for at least 2 hours.
