Ingredients for 8 parts
- 8 eggs
- 120 g. sugar
- 1 c. à c. sea salt
- 360 g. dark chocolate 70%
Steps
- Crack the eggs, separating the whites from the yolks. Melt the chocolate in a double boiler. Remove from heat and let cool.
- Add the yolks to the lukewarm melted chocolate and mix in concentric circles with a spatula.
- Beat the egg whites until stiff with a pinch of salt, then add the sugar while continuing to whisk.
- Gently fold the beaten egg whites into the chocolate in three batches.
- Pour the mousse into a large bowl or ramekins. Let set in the refrigerator for at least 2 hours.
