Steps

  1. Finely chop the onions and sauté them in butter until golden.
  2. Moisten with white wine. Reduce by half.
  3. Add the veal stock or bound veal juice.
  4. Complete with fresh tomatoes cut into cubes.
  5. Finish with the tomato purée and crushed garlic.
  6. Let it cook for 7 to 8 minutes.
  7. Season with salt and pepper.
  8. Mount with the remaining 20 g of butter.
  9. Add the crushed parsley.
