Steps

  1. Cut the chicken into pieces.
  2. Slice the onion and peppers. Mince the garlic.
  3. In a cocotte, heat the olive oil and brown the chicken pieces.
  4. Add the onion, garlic, and peppers and cook for 5 minutes.
  5. Add the chopped tomatoes, thyme, bay leaf, salt, and pepper.
  6. Pour in the white wine, cover, and simmer over low heat for 60 minutes.
  7. Add the ham cut into lardons at the end of cooking.
  8. Serve hot.
