Ingredients for 4 parts
- 2 garlics
- 4 c. à s. olive oil
- 0.5 c. à c. black pepper
- 0.5 c. à c. thyme
- 10 anchovy fillets
- 2 c. à s. red wine vinegar
Steps
- Finely chop the anchovy fillets and garlic cloves.
- In a mortar, crush the anchovies and garlic until you get a paste.
- Gradually add the olive oil, vinegar, thyme and pepper, mixing well.
- Serve chilled with raw vegetables or toasts.
