Ingredients for 6 parts
- 0.5 c. à c. sea salt
- 4 garlics
- 200 ml. olive oil
- 1 egg yolk
- 1 c. à s. lemon juice
Steps
- Pound the garlic cloves in a mortar with a pinch of salt until you get a paste.
- Add the egg yolk and mix vigorously.
- Pour the olive oil little by little, while whisking constantly to emulsify the sauce.
- Add the lemon juice. Taste and adjust the seasoning.
- Serve chilled.
