Steps

  1. Pound the garlic cloves in a mortar with a pinch of salt until you get a paste.
  2. Add the egg yolk and mix vigorously.
  3. Pour the olive oil little by little, while whisking constantly to emulsify the sauce.
  4. Add the lemon juice. Taste and adjust the seasoning.
  5. Serve chilled.
