Ingredients for 5 parts

Steps

  1. Cut the veal into pieces.
  2. Peel and chop the onion.
  3. Peel and slice the carrots.
  4. In a Dutch oven, brown the veal in a little oil.
  5. Add the onion, carrots, chicken broth, vegetable broth cube, mushrooms, white wine, salt and pepper.
  6. Cover and simmer over low heat for 2 hours.
  7. In a bowl, mix the crème fraîche, egg yolk and lemon juice.
  8. Add this mixture to the veal blanquette and stir gently.
  9. Serve immediately with rice.
