Ingredients for 5 parts
- 5 g. sea salt
- 40 g. flour allergen !
- 1 onion (100 g)
- 5 g. poivre noir
- 1 lemon (100 g)
- 250 ml. vin blanc
- 200 g. crème fraîche allergen !
- 2 carotts (160 g)
- 0 egg yolk (0 g) allergen !
- 100 ml. chicken broth
- 200 champignon de paris
- 1 Kg. veal blanquette
Instructions
- Cut the veal into pieces.
- Peel and chop the onion.
- Peel and slice the carrots.
- In a Dutch oven, brown the veal in a little oil.
- Add the onion, carrots, chicken broth, vegetable broth cube, mushrooms, white wine, salt and pepper.
- Cover and simmer over low heat for 2 hours.
- In a bowl, mix the crème fraîche, egg yolk and lemon juice.
- Add this mixture to the veal blanquette and stir gently.
- Serve immediately with rice.
