Ingredients for 4 parts
- 3 g. sea salt
- 1 onion
- 4 garlics
- 2 c. à c. olive oil
- 3 g. poivre noir
- 1 lemon
- 100 ml. chicken broth
- 1 bouquet garni
- 1 free range chicken
Steps
- Preheat your oven to 180°C.
- In your cast iron casserole, heat the olive oil over medium heat.
- Season the whole chicken with salt and pepper, then brown it on all sides in the casserole.
- Add the minced onion and crushed garlic to the casserole, and sauté until translucent.
- Put the chicken back in the casserole, add the bouquet garni and the lemon. Pour the chicken broth around the chicken.
- Cover the casserole and place it in the preheated oven. Cook for about 1h30, basting the chicken occasionally with the cooking juice.
- About 20 minutes before the end of cooking, add the morels to the casserole so they cook gently with the chicken and absorb all the flavors.
- Once the chicken is cooked, remove it from the casserole and let it rest for a few minutes before carving.
- Serve the chicken with the morels and the confit onions, accompanied by roasted potatoes or seasonal vegetables.
