Ingredients for 4 parts
- 1 g. sea salt
- 1 garlic
- 60 ml. olive oil
- 1 g. black pepper
- 1 c. à c. Parmesan cheese
- 1 c. à c. mustard
- 2 anchovy fillets
- 1 egg yolk
- 1 c. à c. lemon juice
Steps
- Mince the garlic and anchovies (or use anchovy paste).
- In a bowl, mix the egg yolk, mustard, lemon juice, and minced garlic.
- Slowly add the olive oil while whisking until emulsified.
- Add the crushed anchovies and grated Parmesan.
- Season with salt and pepper.
