Ingredients for 2 parts

Steps

  1. Soak the rice noodles in hot water for 10 minutes, then drain.
  2. In a bowl, mix the fish sauce, soy sauce, palm sugar, and lime juice to prepare the sauce.
  3. Heat the oil in a pan. Sauté the garlic and chopped onion for 2 minutes.
  4. Add the shrimp and diced tofu. Cook for 5 minutes.
  5. Push the ingredients to the side of the pan and crack the eggs in the center. Scramble lightly, then mix with the rest.
  6. Add the drained noodles and sauce. Mix well and stir-fry for 3-4 minutes.
  7. Add the bean sprouts and chives. Cook for another 1 minute.
  8. Serve hot, topped with crushed peanuts, lime wedges, and chili powder.
