Steps

  1. Soak the gelatin sheets in cold water for 10 minutes.
  2. In two separate saucepans, melt the white chocolate and the dark chocolate with 100 ml of liquid cream in each saucepan, over low heat.
  3. In a bowl, whisk the egg yolks with the sugar until the mixture turns pale.
  4. Divide the egg yolk mixture in half. Add half to the melted white chocolate and the other half to the melted dark chocolate. Mix gently.
  5. Squeeze out the gelatin and divide it in half. Add half to the white chocolate mixture and the other half to the dark chocolate mixture. Mix until it is dissolved.
  6. In another bowl, whip the remaining liquid cream into whipped cream.
  7. Divide the whipped cream in half. Gently fold half into the white chocolate mixture and the other half into the dark chocolate mixture.
  8. In individual containers, alternate layers of white chocolate mousse and dark chocolate mousse to create a marbled effect.
  9. Let it rest in the refrigerator for at least 3 hours.
