Steps

  1. Preheat the oven to 180°C (350°F).
  2. Wash and slice the vegetables into rounds about 5 mm thick.
  3. Thinly slice the onion.
  4. In a gratin dish, arrange the vegetable rounds, alternating colors.
  5. Spread the sliced onion over the vegetables.
  6. Drizzle with olive oil, sprinkle with herbs de Provence, salt, and pepper.
  7. Bake for 50 minutes, or until the vegetables are tender and lightly golden.
  8. Serve hot or warm.
