Ingredients for 30 parts
- 400 g. sugar
- 500 g. raspberries
- 2 c. à s. lemon juice
- 10 g. pectin
Steps
- In a saucepan, mix the raspberries, sugar, and lemon juice.
- Heat over medium heat, stirring regularly until the sugar is dissolved.
- Bring to a boil and cook for 10 minutes, stirring occasionally.
- Add the pectin and mix vigorously. Continue cooking for 5 minutes, stirring constantly.
- Check the temperature using a kitchen thermometer. The fruit paste should reach 105°C (221°F).
- Pour the mixture into a square dish lined with parchment paper.
- Let cool at room temperature for 24 hours.
- Unmold and cut into squares or rectangles. Sprinkle with sugar if desired.
