Ingredients for 4 parts
- 100 g. butter
- 1 g. sea salt
- 1 shallot
- 1 g. black pepper
- 40 g. crème fraîche
- 10 g. mustard
- 0.5 lemon juice
- 10 g. chives
- 180 g. mackerel fillets
Steps
- Crumble the mackerel fillets with a fork.
- Add lemon juice, mustard, and softened butter. Mix well.
- Rinse and chop the chives. Peel and mince the shallot. Add the cream, chives, and shallot to the mackerel. Season with salt and pepper.
- Keep cool in an airtight container. Take out the rillettes 15 minutes before serving.
- Serve the rillettes in verrines with crackers in individual portions on small plates, or spread them on thinly sliced and toasted bread on a large platter.
