Ingredients for 6 parts
- 3 eggs
- 100 g. butter
- 20 g. sugar
- 0.5 c. à c. sea salt
- 270 g. flour
- 50 g. water
- 200 g. whole milk
- 50 g. sunflower oil
- 22 g. cacao
- 100 g. cream
- 2 c. à c. baking powder
- 1 vanilla bean
Steps
- Preheat the oven to 175° conventional heat.
- Butter and line a cake tin with baking paper.
- In a large bowl, whisk the softened butter and both sugars until creamy.
- Add the eggs and mix until smooth.
- Separately, mix the flour, baking powder and salt.
- Separately, mix the milk, oil, cream and vanilla.
- Then add half of the wet ingredients to the large bowl, then half of the dry ingredients. Finish with the rest of the wet ingredients and the rest of the dry ingredients. Do not overmix the batter (just enough) to preserve the softness of the cake.
- Divide the batter into two equal parts in two bowls: in one of them, add the sifted cocoa powder and mix.
- To create the marbled effect in the cake tin: first pour in a third of the plain batter, then half of the chocolate batter. Then add a third of the plain batter, then the last half of the chocolate batter. Finish with the remaining plain batter.
- Bake for about 45 to 55 minutes (this varies greatly depending on the oven). The top of the cake should be golden brown. To check if it is cooked through, insert a wooden skewer: it should come out dry or with a few crumbs. Leave to cool then turn out onto a wire rack.
- While the cake is baking: prepare the soaking syrup (which helps to keep the top of the cake even softer). In a small saucepan, bring the water and sugar to the boil. Brush over the top of the cake when it comes out of the oven.
