Steps

  1. Pour the brown sugar, cinnamon and spice mix into a large bowl. Add the soft butter and the egg. Mix until you get a smooth paste. Gradually incorporate the sifted flour, mixing well with a spatula. Add salt and baking powder, mix well.
  2. Let the dough rest in the refrigerator for 2 hours.
  3. Preheat the oven to 180°C (th. 6). Divide the dough into 3 balls. Spread a ball between 2 sheets of baking paper to a thickness of 3 to 4 mm. Cut out rectangular shapes 3 to 4 cm long.
  4. Arrange the cookies on a baking sheet lined with baking paper. Bake for 10 minutes at 180°C. Allow the speculoos to cool to room temperature before enjoying.
