Steps

  1. Wash the potatoes without peeling them. Cook them in water with coarse salt, without a lid. Check the doneness by making sure they remain firm. Drain and peel the potatoes.
  2. Cut the potatoes into 0.5 cm thick slices.
  3. Heat the oil and butter in a non-stick pan. Place the potatoes and brown them quickly. Make sure the potatoes are browned on both sides. Season with pepper.
  4. Add the chopped parsley before serving. Serve hot.
