Fried fish goujonnettes are a simple and delicious dish, perfect for a quick meal or a starter. Fresh fish fillets are breaded and deep-fried until golden brown and crispy.

Ingredients for 2 parts
- 2 eggs (130 g) allergen !
- 100 g. breadcrumbs allergen !
- 100 g. flour allergen !
- 500 ml. frying oil
- 400 g. sole allergen !
Instructions
- Prepare the sole fillets. Cut pieces 1 cm to 1.5 cm thick and about 10 cm long. If the fillets are a little bloody, soak them in cold milk for 15 to 20 minutes.
- Bread the sole fillets in the English style: pass them successively in the flour, the beaten eggs and the breadcrumbs, making sure to coat them well at each stage.
- Roll the goujonnettes with the flat of your hand to make the breadcrumbs adhere well and give them a round shape.
- Heat the frying oil to 180°C. Dip the goujonnettes in the frying bath for 2 minutes.
- Remove the goujonnettes from the frying oil using a skimmer and place them on absorbent paper to remove excess oil. Salt.
- Serve the goujonnettes immediately.
